This is a quick and easy Banana Bread Recipe you can whip together in a few minutes. It is perfect for when you have a few overly ripe bananas to use instead of tossing them. Feel free to add to the recipe to make it your own (cinnamon, walnuts, etc). The bread stays good for up to three days and tastes wonderful warm. Enjoy! 
1/2 c. butter, room temperature
1 c. sugar
2 eggs, beaten
4 bananas, crushed
1 1/2 c. flour, sifted
1 tsp. baking soda
1/2 tsp salt
1/2 tsp vanilla extract
walnuts and cinnamon can also be added based on personal tastes
Cream together the eggs and sugar in a bowl. In another bowl, mash the ripened bananas, then combine with the egg mixture. Sift together the flour, salt, and soda. Add the sifted mixture to the banana mixture, then pour into a greased and floured bread pan. Bake at 350 degrees for 60 minutes. Keeps perfectly refrigerated. Enjoy!
