We lo ve to make our own recipes, especially with the kids. Little man is a PB Cup monster so this recipe is a favorite of ours! It is super fun to make and incredibly easy. Every week or so we whip up a batch and I leave them in a container in the fridge as a quick treat...or a bribe for the kids. Want to try it? Here is what you need!
12 Muffin Cups
1 12 oz package milk chocolate chips
1 c. reduced fat peanut butter (must be reduced fat)
1/2 c. powdered sugar
1/4 tsp. salt

Go grab those items and then keep reading! Makes 12 PB Cups.
First, I cut down the muffin cups. Since you don't want to make the PB cups too thick, try to keep them about half width or a bit less.
Next, pour the chips into a glass bowl and pop them into the microwave for two minutes at 50% power. Stir the chips and let them set for a minute. If they need a bit more melting, pop them back in the microwave at 50% power for 30 seconds. Do not overcook or the chocolate will seize.
With a small spoon (I use a teaspoon) put a small amount of chocolate into the center of the muffin cup and pull toward the outer edge. Coat the entire cup and repeat. Place into a muffin tin after coated and then place in refrigerator until chocolate is completely cool and hardened, typically 30 minutes.
Combine the peanut butter, salt and powered sugar in a bowl. After the chocolate chips are hardened, put the peanut butter mixture into the microwave for one minute. This will allow it to flow easily into the cups. Spoon warm peanut butter mixture into cups, leaving room for additional chocolate layer in a bit. After you fill them all, pop them into the fridge for 20 more minutes.
Now, it is time to finish them off! re-melt the chocolate you used earlier, about 30-60 seconds. Use a teaspoon to spread the chocolate on top of each candy. Once you are finished, chill for one hour. Be sure to remove the paper before you enjoy!
