We love to cook at home and come up with fun recipes that our family loves. Our latest addiction is Litehouse Salad Dressing. There are so many yummy ways to use it, and it is a far cry from those room temperature dressings we all grew up with! Our family loves to much on veggies with a side of Litehouse Ranch Salad Dressing or I make my awesome wings and serve them with Litehouse Bleu Cheese Salad Dressing. Today, we are making our kid's favorite Litehouse recipe, Loaded Potato Skins with Litehouse Ranch. They are SO Yummy and super easy! I make these for lunch snacks and for party apps. They are always a hit!
Ingredients
(makes four potato skins) 2 baking potatoes
Coarse salt
6 Tbsp Oil
4 chicken tenders
½ packet of ranch seasoning
¼ cup of Litehouse Ranch Salad Dressing
1/4 cup of Mozzarella cheese
1/4 cup of Cheddar cheese
2 slices of crispy bacon
You will also need foil to bake the potatoes.
Picture
First, you will need to bake the potatoes. Preheat the oven to 350 and wash your potatoes. While they are damp, rub them with the coarse salt. Poke a couple holes in each potato and then wrap in foil. Each potato will need to be wrapped individually to ensure proper cooking. Pop them in the oven to bake for 1-2 hours.
While the potatoes are baking, put the oil into a frying pan and heat. Coat the chicken in the dry ranch and then place it in the hot pan. Cook the chicken in the pan, on medium heat, until completely done and golden. When cooled, chop the chicken into small pieces and set aside. Fry or bake your bacon, crumble and set aside.

Remove your potatoes from the oven when they are completely baked, cut them in half. Scoop out most of the potato meat but don't go too deep or you will break the skin.
Picture
Fill the potatoes with the chicken from earlier. Then, sprinkle Mozzarella and Cheddar on top. Drizzle the Litehouse Ranch Salad Dressing on the top of the potatoes and finish with the bacon.

Place potato skins on a baking sheet and place in oven on 350 for 15 min. Serve with a side of Litehouse Ranch Salad Dressing or Litehouse Bleu Cheese!
Head to your supermarket and pick up some Litehouse Salad Dressing for your next meal. You can find it in the refrigerated section of the grocery! Want to win a couple bottles? Don't forget to enter my giveaway below!
